Spaghetti with Kerr Farm Pinotage Sauce - July 25, 1999
In a frying pan melt some butter with some oil.
In this saute 1 large clove of crushed garlic, one finely chopped pickling size onion and three coarsely chopped rashers of streaky bacon.
When the onion is golden and the bacon is glossy, remove.
In the remaining butter and oil (if none left add some more) brown about 500 grams of minced beef. Return the garlic, onion and bacon mixture.
Sprinkle in some mixed Italian herbs, a tin of tomato and courgettes and salt and pepper to taste.
Add a splash or two of Kerr Farm Pinotage. Cover and simmer for about 20 minutes. Check the liquid. If too dry, add some more wine or water. Now add about half a cup of chopped mushrooms. When the mushrooms are cooked the sauce should be ready.
Serve over spaghetti pasta cooked to your taste and enjoy with a glass of two of the Kerr Farm Pinotage 1998. Delicious!
Note: I only cook with wine I would drink. While the alcohol dissipates with the cooking, the flavours of the wine remain in the food.
